5 Top Food Trends For 2022

Knowing what’s trending and proving popular among the foodie community is a must for businesses keen to increase the number of customers coming in through their doors.

Of course, you won’t want to follow all the trends and some may not tie in with your particular brand of cuisine, but you never know when inspiration might strike and it’s always interesting to see new concepts, ingredients and flavours come to the fore.

Over the next few months, you can expect to see vegetables really heroed on the plate, driven by increased consumer interest in healthier, more sustainable lifestyles, from both a personal and environmental perspective.

And it’s also being predicted that the not-so-humble mushroom is going to be the ingredient of the moment for 2022. Again, this is being put down to the associated health benefits of fungi, but also because they don’t have much taste on their own so they work well in a wide range of different dishes and can be used in all sorts of interesting ways.

Another really interesting fungus that is being used increasingly by top chefs in New York, London and elsewhere is koji (aspergillus oryzae). This is used to ferment soybeans into soy sauce and miso paste, as well as a vast array of other applications - and, no doubt, its versatility is exactly why it’s currying favour right now.

From a more practical trend perspective where restaurants are concerned, technology is also expected to come even more to the fore this year and beyond.

We’re going to see takeout become increasingly airborne, for example, and robots are likely to start doing more of the serving… as evidenced by Indonesian restaurant Kata Kita in Melbourne, with an automated trundler delivering food to tables!

Of course, these are just a small handful of the trends that are going to emerge this year. It should certainly be interesting to see what pops up next!
